I make this recipe throughout the entire year because of its simplicity but I especially love it in the summer. It's light and so delicious!
Ingredients:
1 pkg (16 oz) penne pasta
3 cups fully cooked ham (I get the kind that is cubed)
1 large sweet red pepper, diced
1 medium onion
1/4 cup minced fresh parsley
2 garlic cloves, minced
1/2 teaspoon dried basal
1/2 teaspoon dried oregano
1/4 cup olive oil
3 tablespoons butter
1 can (14 1/2 oz) chicken broth
1 tablespoon lemon juice
1/2 cup shredded parmesan cheese
Cook pasta according to package directions.
Meanwhile in a large skillet, sauté ham, red pepper, onion, parsley, garlic, basil and oregano in oil and butter 4-6 minutes or until ham is browned and vegetables are tender.
Stir in broth and lemon juice. Bring to a boil, reduce heat and simmer uncovered for 10-15 minutes or until liquid is reduced by half.
Drain pasta and stir into ham mixture. Sprinkle with parmesan cheese and enjoy!
